Crepes Suzette is a classic French dessert consisting of crepes with a sauce of caramelized sugar, orange juice, and orange liqueur (Grand Marnier or Curaçao), which is then flambéed. The dish was reportedly invented by accident in 1895 at the Café de Paris in Monte Carlo. A 14-year-old assistant waiter named Henri Charpentier was preparing a dessert for the Prince of Wales (the future King Edward VII). The liqueur accidentally caught fire. Fearing the dish was ruined, he tasted it and found the combination of caramelized alcohol and orange to be exquisite. The Prince loved it and asked that the dish be named after one of his companions, a young girl named Suzette.
