Chop Suey is often considered the quintessential 'fake' Chinese dish, but its origins are rooted in real history. The name comes from the Cantonese 'tsap seui,' meaning 'miscellaneous leftovers.' While its exact invention is debated, one popular legend says it was created during the 1896 visit of Chinese diplomat Li Hung-chang to New York. His chefs reportedly prepared a dish that would appeal to both Chinese and American palates. However, it is more likely an adaptation of a rural dish from the Toisan region of China, modified by early immigrants in California using available ingredients like bean sprouts, celery, and meat in a starch-thickened sauce. It became a sensation in the early 20th century, helping to popularize Chinese-American cuisine.
