The recipe describes the use of 'bappir' (twice-baked barley bread) which was soaked in water and fermented. The resulting beverage was a thick, nutritious liquid that was often consumed through a long straw to avoid the floating bits of grain and husks. For the Sumerians, beer was considered a gift from the gods that promoted heartiness and well-being.
